Recipe Kaffir Lime Gindara (Butter Fish)
 
 

Atmosphere’s chef Suastika takes us through one of his delightful main courses – creamy, light and full of zest!

   
Ingredients:
180g fillet butter fish
90g beef bacon
110g spinach
120g mashed potato lazy
90ml kaffir lime sauce
30ml lime marinade
5g butter
3slice roast tomato
5sht filo pastry garnish
Cut butter fish into two slices, season with salt & pepper
Wrap butter fish with beef bacon then grill
Sauté spinach as accompaniment
Wrap mashed potato with beef bacon accompanied by filo pastry, bake until golden brown
Arrange on plate served with mashed potato, spinach and kaffir lime sauce.
