Roll Of The Durum
Pasta Varieties


Its ingredients are simple, yet ask any expert and they’ll tell you each type has its own unique characteristics and even flavour. What’s more, the received knowledge is that certain sauces and ingredients ‘match’ certain types of pasta. We asked Ultimo Restaurant’s chef Giullio about some of the pastas he uses…& here they are.

Spaghetti
The most versatile of all pastas, can be served with virtually any sauce

Farfalle
Farfalle is a special one and is great with a creamy sauce and smoked salmon

Lasagne
The classic use is with béchamel and bolognaise sauce baked in the oven, but it can also be rolled to make cannelloni and served with spinach, ricotta cheese etc.

Pappardelle Rigate
Flatter and larger than linguine, this is great with a cream sauce and vegetables or smoked salmon

Rigatoni
Comes in an assortment of sizes and is a perfect match for rich, strong tasting sauces like amatriciana with tomato, onion and bacon
